Whole wheat bread

I made whole wheat bread. This is one of the easiest recipes. It does not need a bread tin or a banneton. All it needs is whole wheat flour, yeast and a lot of patience. This recipe is not something that I developed. Being health conscious, I wanted to see what real whole wheat bread tastes like and was looking for a recipe that does not use flour [maida]. Most of the recipes I came across for whole wheat bread always included some or large amounts of maida except this one.

Although I didn’t stick to the recipe a 100%, I got good results. The joy of eating something fresh and organic is truly a luxury in today’s times. The whole house smells like freshly baked bread and the bread tastes very simple and rustic. If you are planning to make this bread, be mindful that it is a healthy recipe and it’s not going to taste sweet and chewy like regular bread. It’s going to taste, well, healthy. If you are open to trying new recipes and like healthy food, look no further.

 

Ingredients:

Whole wheat flour: 3.5 cups [It’s better if you can get your own flour ground in the mill from whole wheat grains]

Flax seeds: 2-3 tbsp ground [optional]

Water: 1.5 cups lukewarm water

Dry yeast: 1 tbsp

Salt: 3 tbsp

Sugar: 3 tbsp

Steps:

  1. Take 1.5 cups of lukewarm water and add sugar. Sprinkle instant dry yeast in it. Leave it to rest for 15 mins.
  2. In the meanwhile, grind flaxseeds to a coarse powder
  3. Then add whole wheat flour 1/3 of the whole quantity at a time and mix well. Also add the flax seed powder and salt. Make a sticky but stiff dough after kneading for about 10 mins.
  4. Cover the dough with a wet kitchen towel and keep it in a warm place for about 3 hours. I kept the dough inside the microwave which was obviously not in use. IMG_20190201_090640
  5. Uncover the dough and sprinkle it with some wheat flour. Knead again for 10 mins and let it rest for about 2 hours after covering it with a kitchen towel. IMG_20190201_125918
  6.  Prepare a baking tray by lining it with a parchment paper/baking paper.
  7. Once the dough doubles or triples in size, score it with a sharp knife and keep it on the baking tray.  Scoring helps the air to release and prove better. IMG_20190201_130440 IMG_20190201_144302
  8. Pre-heat the oven to 200 deg Celsius for about 10 mins.
  9. You can sprinkle the dough with flour and sprinkle water over it from a distance.
  10. Then bake for 30 mins at 200 C. Under the tray I kept another tray with half inch of water to keep it moist and hot inside the oven.
  11. Let it cool on a rack and then serve with jam/butter/scrambled eggs. Toast it and enjoy if that’s what you like!  IMG_20190224_150034_774
